Pairing Food & Wine # 7 | Miso Chicken & Ca’ Di Rajo Prosecco

I do love Japanese food, but I have never tried Miso Chicken before. So, why not try something new to pair with a fine prosecco?

The miso paste itself is a quite popular ingredient in Japanese cuisine. You can find it in many types such as white, red, and brown rice. The secret of preparing this meal is having the right balanced ingredients when marinating the chicken.

I have also opted to have Sautéed Veggies as a side dish. There are several ways of preparing vegetables, but using extra olive oil is essential to make it work.

To pair with this delicious and light meal, I have chosen the Ca’di Rajo Prosecco which is a fine dry and sparkling wine that will be the best match for the umami taste of the dish. Just perfectly balanced with Miso Chicken.

Ingredients

1.5 kg chicken wing drumsticks/chicken filet
lemon
1 small lemon
1 heaped tablespoon of organic Japanese Barley Miso Paste – Pasteurised – 300g – Clearspring
1 level dessert spoon caster sugar
1/2 cup cooking sake
parsley (parsley and chives)
Parsley and chopped chives to taste
White sesame seed to taste and olive Oil
